Here's a recipe for Palak Paneer:

Ingredients:

  • 250g fresh spinach leaves
  • 200g paneer, cut into cubes
  • 2 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1-inch ginger, chopped
  • 1-2 green chillies, chopped
  • 2 tomatoes, chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • Salt to taste
  • 1/2 cup water
  • 1/4 cup cream (optional)

Instructions:

  1. Rinse the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes. Drain and keep aside.
  2. Heat oil in a pan and sauté onions until they turn translucent.
  3. Add garlic, ginger, and green chillies and sauté for a minute.
  4. Add chopped tomatoes and cook until they are soft and mushy.
  5. Add cumin powder, coriander powder, turmeric powder, red chilli powder, and salt and mix well.
  6. Add the blanched spinach leaves and stir to combine with the masala.
  7. Let the mixture cool down and then blend it into a smooth puree.
  8. Return the puree to the pan and add water to adjust the consistency.
  9. Bring it to a boil and then add paneer cubes. Let it simmer for 2-3 minutes.
  10. If desired, add cream and stir well.
  11. Serve hot with roti, naan, or rice.
