Here's a recipe for Palak Paneer:
Ingredients:
- 250g fresh spinach leaves
- 200g paneer, cut into cubes
- 2 tbsp oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1-inch ginger, chopped
- 1-2 green chillies, chopped
- 2 tomatoes, chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- Salt to taste
- 1/2 cup water
- 1/4 cup cream (optional)
Instructions:
- Rinse the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes. Drain and keep aside.
- Heat oil in a pan and sauté onions until they turn translucent.
- Add garlic, ginger, and green chillies and sauté for a minute.
- Add chopped tomatoes and cook until they are soft and mushy.
- Add cumin powder, coriander powder, turmeric powder, red chilli powder, and salt and mix well.
- Add the blanched spinach leaves and stir to combine with the masala.
- Let the mixture cool down and then blend it into a smooth puree.
- Return the puree to the pan and add water to adjust the consistency.
- Bring it to a boil and then add paneer cubes. Let it simmer for 2-3 minutes.
- If desired, add cream and stir well.
- Serve hot with roti, naan, or rice.
