How to make chicken curry?
Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14 oz.) diced tomatoes
- 1 cup chicken broth
- 1 cup coconut milk
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Chopped fresh cilantro (optional, for garnish)
Directions:
Heat the oil in a large saucepan over medium-high heat.
Add the onion, garlic, and ginger and cook until the onion is translucent, about 5 minutes.
Add the chicken and cook until browned on all sides, about 5 minutes.
Add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using), and cook for 1 minute, stirring constantly.
Add the diced tomatoes and chicken broth and bring to a simmer.
Reduce the heat to low, cover the saucepan, and let the curry simmer for 20 minutes, stirring occasionally.
Add the coconut milk and cook for an additional 10 minutes, stirring occasionally.
Season with salt and pepper to taste.
Garnish with chopped cilantro (if desired) and serve over rice or with naan bread.
